青南瓜乳酪薄荷煎饼

Ingredients
  • 1 tablespoon peanut oil
  • 1 shallot, cut into thin rings
  • 1 courgette, coarsely chopped
  • 6 eggs, beaten
  • 100g/3.5 oz feta
  • 1 teaspoon dried oregano
  • Salt and pepper
  • Garnish: A few fresh mint leaves, finely chopped
Preparation

在煎锅中热油。将葱煎至透明色。加入青南瓜并煮几分钟。加入鸡蛋并用小火煮至开始成形。将羊乳酪摊在鸡蛋混合物上,继续煮几分钟。用牛至、盐和胡椒调味。撒上剁碎的薄荷。
