泰式蝦

Ingredients
- 300g/10.5 oz peeled and cleaned shrimp
- 50g/1.7 oz unsalted peanuts, finely chopped
- 1 tablespoon peanut oil
- 1 clove of garlic, minced
- 5 spring onions, sliced diagonally
- 60ml/2 fl oz sweet chilli sauce
- 400g/14.1 oz rice noodles, soaked for 2 minutes in warm water
- 2 heads pak choi, finely sliced
- 100g/3.5 fl oz bean sprouts
- 1 lime
- 2 tablespoons fish sauce (to taste, fish sauce is a salt substitute)
- 1 bunch fresh coriander
Preparation
將花生剁碎並在預熱的炒鍋中爆炒 1 分鐘,直到略微烤熟。放在一旁。在同一口炒鍋中用小火加熱 1 湯匙花生油。翻炒蔥蒜 1-2 分鐘至柔軟。拌入甜辣椒醬和少量清水,並加入泡好的麵條。再翻炒 3 分鐘左右。然後加入切碎的小白菜和生蝦,再煮 3-5 分鐘。用剁碎的香菜(留少量香菜葉用於點綴)、酸橙汁和 2 湯匙魚露調味。用烤好的花生醬和少量香菜葉點綴。
