凱撒卷

Ingredients
- 1 chicken fillet (weighing around 250g/8.8 oz to 300g/10.5 oz)
- 1 teaspoon of butter
- 1/2 head Romaine lettuce, cut into strips
- 100g/3.5 oz grated Parmesan
- 4 wraps
- 2 egg yolks
- 2 cloves of garlic
- 1/2 lemon
- 1 tablespoon mustard
- 150ml/5.2 fl oz peanut oil
- 100ml/3.5 fl oz natural yogurt
- 3 salted anchovy fillets, chopped
- Pinch of cayenne pepper
- 1 teaspoon Worcestershire sauce
Preparation
將雞柳切成約 1 釐米厚的小條。在煎鍋中熱一茶匙黃油,將雞柳各邊煎至金黃或煎透。從鍋中取出並冷卻一會。凱撒調料:分開蛋黃和蛋白,將蛋黃放入一隻深碗中。碾碎蒜瓣,加入蛋黃中。從碗上方擠入檸檬汁,並加入芥末。徹底攪打,逐漸加入花生油。繼續攪打,直到混合物轉為蛋黃醬,然後拌入優酪乳和鯷魚片。用辣椒面和伍斯特醬調味。放在一旁。沖洗並瀝幹萵苣。在煎鍋中略微加熱面卷。每張面卷上放一顆萵苣。將適量雞肉條擺在中間,撒上少量帕馬森乾酪,舀上適量凱撒調料。卷起面卷,並用牙籤固定。
